A follow-up on salt-fish fried rice: while I continue to not be able to find Haam Yu anywhere even remotely near me, I found an alternative that gets closer to what I could get in the DC area:
Chop two anchovies into really really tiny pieces for one small mackerel. The tiny bits of anchovy bring that pungent kick that the dish should have.- Salted Mackerel for the fish. Note that this isn't like Haam Yu - since it is a fresh fish (e.g. it has not been fermented) it doesn't pack the punch.
- A little bit of fish sauce instead of soy sauce as needed and...
- Anchovies, the kind you get in a tin.
